I just thought of something when I saw the pic of your delicious sandwich. I've never had a Reuben sandwich. Always wanted to try, but never pursued it. What does sauerkraut taste like?

Saurkraut is sour (surprise) has a vinegar like tang. Reuben is great hard to think of a comparison spiced ham ish... IDK maybe like corned beef.
