All in red please, all restored and all drivable. No Garage Queens for me...

1914 Stutz Bearcat (And no @Tcoat its not the car I learned to drive in)
1957 Chevy BelAir Convertible 2Door (this is what I learned to drive in)
1969 Chevy Camaro Z28 RS (OK this one can be Orange, with white stripes)
1985 Toyota MR2
2015 Chevy Corvette Stingray

and I'll add one extra, a 1949 Lincoln Continental because I always told my Dad one day I would buy him one for his retirement, but sadly he didn't live to make it quite that far.

The first two are sorta easy -

E Type convertible V12 and a 2+2 4.2.

That Local Motors Rally Fighter might actually be the perfect DD so that makes it #3. I really loved my old Willys so wouldn't mind another but a very late model FJ40 with the 5 speed is a bit more comfy and road worthy, #4. #5 has to be open ended, emotion has to take over because I'm human (unless you ask my wife) and one minute it could be a 63 Vette and the next it could be a CTS V Wagon or a Unimog or a 71 Challenger RT or a new F Type or...........

edit; Wouldn't want to forget about a Bugatti Type 57 or Atlantique or Aerolithe but only because they were the best looking cars ever made.

'15 Subaru STI- daily driver
S15 Silvia- drift toy
S/C 300hp Ariel Atom- track car
'15 Lexus IS 250 F-Sport- Wife's daily
'06ish Tacoma Preruner Trophy truck type build- wife's toy

We've had this discussion before and we both agree on a list like this. Exotic super cars would be cool, but I still can't see myself ever really spending the money on one and owning one.
