Police here have been using seized cars for years. They have 'Stangs, Camaros, Challengers, etc with the same hidden lights and stealth stickers on them. The fun part is they then park in the middle of the highway where you can see them from miles away. If I see a Camaro parked in the middle of the road I sure as hell can guess what is going on.

No the police here are very well paid.
This isn't really even a "new" tactic for them as back in the 70s they had some old Dodge Darts that they would use as radar cars on the side of the highway. They would tag you with them and then a marked cruiser would pull you over.
It does make good sense to use the resources you already have. Once they clock a few hundred thousand miles they just send the cars to auction so they still make even more money from them.
They do buy purpose built cars as well but since the Crown Vic is gone they are usually one of several different makes/models.

On a major freeway last night, an older Chevy Silverado that was lowered with blacked out 22's pulled up next to me, hesitated, and then gassed it. Now when I say gassed it, I don't mean he took off and left me in his dust. He hit the throttle and he either had a muffler delete or had just had his exhaust system fall off because this thing was crazy loud, but he didn't go anywhere. He just barely started creeping ahead of me. He waited for me to catch up (I stayed the same speed the entire time BTW) and then he "floored it" again.

Now I was getting a good laugh out of all of this, and for a second, the high-school version of me wanted to smoke him just because he was one of the few on the highway that I could pull away from... BUT, I had just been at TopGolf and consumed a few beers (still under the legal limit) so I decided that it probably wasn't a very good idea to give the 5-0 any reason to give me a hard time, no matter how tempting a W in my FRS was.

My intuition paid off because we topped the next hill and a state trooper was posted on the side of the highway just waiting for someone to be doing exactly what we almost did. The Silverado slammed on his brakes to avoid being obvious apparently and I went on my merry way to escape the long arm yet again.

I'm pretty sure this guy was driving the Silverado:

I haven't had any major issues with law enforcement, even with the third brake light being relocated and the different badges.

However, I'll often run into passive aggressive racers who will try to cut me off or speed up to catch up to me. I think it has something to do with the TRD exhaust and how it sounds loud even when I'm at 2k RPM.

I wonder if they have any problems with people claiming entrapment?

Its not entrapment. Unless the cops are instigating street races.

If you are next to a car and you try to get that person to race you. That is all one sided.

Besides they get away with it in prostitution, so why not street racing? :P

Also drug deals, bait cars (for theft) and just about any other "sting" type operation.
No idea about the States but here the only way it would be entrapment is if they actually said something like "Lets race".

I thought that's what they were doing, driving up next to a mark and revving, or whatever it is they do, this basically means "let's race" in street racing circles, no?

And as for the prostitution thing, as I understood it, the UCs don't actually solicit the mark, they wait for the mark to approach the UC.

I can't say I've had much experience with either.

I think they are doing pretty much the same thing with the prostitution. Drive around in a mustang, at a stop light some idiot revs on them, they may or may not rev back (dunno, never done something like that) and as soon as you take off WHAMMY!

Basically doing actions that could be interpreted as "let's race" is not the same as saying "let's race".
