Adjustable means you can raise and lower the height of your car however you want. If you want a 2" drop, definitely go coilovers as I don't even think springs drop 2" (and aren't a preferable option to drop 2" anyways). Coilovers are expensive because they are springs with complementary struts/shocks and are adjustable.

If you are just going to casually track it from time to time, you could just get by with springs. Springs can always be paired with aftermarket shocks/struts to keep things from 'messing up'.

A good set of coilovers are worth their weight in cash. But coilovers are overkill if you're mostly a street driven.
