Ummm BTW - Just because you seized one bearing does not mean the short block is toast.

The dealer would not mess with a rebuild. They just replace the shortblock.
If I had wasted my BRZ engine and it was my fault, I would rebuild it myself.
If the OP thinks he can do a jz engine swap, then rebuilding a little 4 cyl Boxer engine should be easy...( I have done it a few times on my living room floor).
If you spun a crank main bearing, then the case might need oversized bearings and a line-bore (not sure if either of these is available on such a new car)
Chances are that you just spun a rod bearing.

AND I want to call BS on the engine running dry INSTANTANEOUSLY with no warning.
The engine would start to make a lot more noise as it got even 1-2 quarts low.
The temps would start to climb (warning light)
The pressure would start to freak out as the oil pickup was starved (warning light).
The engine would start to knock excessively as it overheated (CEL or limp mode).

If the OP had none of these warnings, then the oil did not disappear slowly over the course of a few weeks.
SO I also agree that the OP is not telling the whole truth.

If you filled up one of these engines (in good condition) with fresh oil and drove it until it detonated, I would just guess over 30,000 miles before oil related failure (assuming it was not just draining or burning away).

They put oil in to see if it knocks. Which it did, so they started the process of tear down.

I'm not sure you are 100% sure what noises are...if you were running with what appears to be no oil you would have noticed

Was there oil anywhere in your engine bay?
Were you running at excessive RPMs (5k + for extended periods)?
Notice any weird smells that weren't there before?

There are several questions that you probably know the answer to that should have thrown up red flags...there is no way your engine "blew" from a week of no oil people have ran 10k+ on bad tunes with FI before their engines blew up

Something was severely neglected if you seriously damaged your block
