Haven't had a chance to test it out yet - I generally baby my clutch, and don't have much use for street racing - however, it might be useful to know how to launch the BRZ.
What's a good RPM? ~2-3k like he suggests?

Depends on the road surface, temperature, tire condition, tire type (if changed, clutch usage and mostly confidence. A poorly done launch can go bad very quickly. It is the cause of many of those Mustang memes and vids that are floating around but even the pros can screw it up.
The few times I did it to see how well they launch I was between 3 and 4K. Was getting a bit squirrely at the upper end but was manageable.
If you want to try it find a nice long empty place with a good clean surface and start at low RPMs and work your way up.
