I'd love to know what's done to the engine to make it pull like that and stay within the class rules...?

I heard from one guy, that was running showroom stock class, that he would fully port the head then go over it with a sand blaster to make it look like it was cast that way. He'd also machine the block and sides of the pistons down so the center of the piston was farther into the combustion chamber but allowing him to stay within the specs of the engine as far as piston height went. Gotta love how much can be done while still staying within the rules.
