Grits are like the Southern version of tofu, they don't have much taste in and of themselves, but are a great vessel for something else.

They are a great excuse to eat butter or cheese, and there is a whole culinary art around "grits and ...." Grits and Shrimp are a big one.

Personally I prefer them with just a little butter, or some jack cheese melted into them. They are also good with a couple of "runny" egg yolk tossed in.
