The problem lies in that so many think it is cheap and easy and it does not get done properly if at all. I bet there are unfinished projects from the 70s that are still passing from person to person as each new guy thinks it will be cheap and easy and then is quickly in over their head.

With the right facility, equipment and know how a salvage can be a great way get a good car for a reasonable dollar or a great way to build a dedicated race car but if you have none of those resources then you are just pouring money down the drain. Back in the day I poured my fair share down the drain until I learned!
