When I compare my rom to say Stg2 UEL 98 v101 AU Rich A01G.bin there are 242 equal tables, 73 changed tables and 94 missing tables. Do I just copy and paste the 73 changed tables from Waynos to my rom (F00C) and i'm done?

Depends on where you want to start. You need to dl the defs he uses, otherwise you will have tables missing that you can't see from his roms. I found this out, still new with this setup, thought i could just use the ofs defs. I believe some tables might still be missing though, fyi, but i have seen the important tables (i was wanting to look at anyway) are there for both.

Personally i know it gets HOT here in az, 100-125f temps out on road, if not a tad higher. Its a dry heat though, so humidity is super low. A bit different there then vegas. You can change Timing Compensation (IAT) 86 do -0.70 and 104 do -1.41. (i have noticed a change, but i have changed over 10 tables so far in the tune) still a work in progress... haha. So far on our crap 91 here, my tune is running ok, think i fixed the issue with with it going lean for a short bit from CL to OL as well.

Have you ran the reg stage 2 ofs tune yet to see where you sit? Scaled your MAF yet? Or ran through wayno and steve99 guides? I wouldn't copy the tables directly, different defs, might mess stuff up. (i haven't to be safe, might be ok, again im still new to this) I use a screen clip (using sniping tool) of the table or parts of it that I want and then manually entered the numbers. Doesn't take me long as I input numbers all day long, lol. After this you can load both and check to make sure you entered them correctly with the compare tables.

If you want, you can use the Base timing A, Base Timing B, Knock Correction MAX A, Timing Compensation (IAT), Timing compensation IAT (Activation), front oxygen sensor scale change (make sure to change the axis as well), rad fan change. (or copy all the tables)

Drive and log the tune lots, i usually have 4 or 5 logs a day, lol. This way you can see whats going on with different temps loads etc, but let the computer learn 1st (unless some major lean or rich or to much knock) otherwise if you make little changes it might be for the worse instead, lol. Just to start off. =D So far im really enjoying this great tool.
