Do you still have the airbag and is it connected like OEM? Not having an airbag funtional in a modern car can certainly cause it to freak out.
And CEL codes should be stored in the ECU, I've never had one not.

The other option is scan it yourself and get an idea of what the issue then start replacing parts. Because googling and asking for a few hours is cheaper than a $100 diagnosis fee at most shops that will often just toss parts at it on your dime with no guarantee of a fix. Agreed it's foolish to ask without proper information attached but I'd certainly start with the internet over opening my wallet for the dealer/local shop, which if it's a strange scenario like the OP the service people will probably be googling as well, in the modern era they don't have resources the average person doesn't aside from thousands of hours of hands on experience, which usually doesn't translate very well across models on electrical issues.
