I am still pretty new at the analysis myself so I don't know how much I can really tell you.
That said a higher number is a faster rotation over the measured time frame. If you take the area under the curve of the gyro reading, you get the amount of rotation (change in cars direction) that occurred. Like so many channels, you can only really tell what is going on by looking at other channels in conjunction with it and seeing what is happening to the car along with what the driver wants to achieve. For example, a rapid excursion of the gyro value could mean that the driver almost lost it, or they could be popping the car into a four wheel slide to get a thrust angle towards corner exit (ie. diamonding the corner).
