Depends on where the clutch is when the car starts to move. If it's moving right as your foot is coming off the ground, that means you're never fully disengaging the clutch and the pedal should be raised. If you've got maybe .5"-1" of travel before the car starts to move, you should be fine.
As far as moving without stalling, do you have any power mods? I'm completely stock and my car always seems like it's going to stall if I let off slowly with no throttle.
