I had the head snap similar to yours yesterday - had to completely unbolt the back elbow to and use it to back out the bolt - thankfully I had the manifold completely off the car. Good luck! I would recommend getting new bolts from either innovate, or sourcing them yourself and not reusing them once you get the elbow off though.
