I think damper travel and quality have a lot to do with it. I remember seeing pics of the coilovers when their working on the cars inbetween stages, and there is a lot of damper stroke.
The GD Impreza's had something like 8.5" of damper stroke on the rear struts. I seem to remember reading that for the GR chassis rally cars (same rear suspension as the BRZ - multilink), Subaru actually retrofitted struts in the rear. I wonder if I can find that source again.
