That's a myth. The cars with the highest insurance rates tend to have two seats but that's not because of the seats. It's because most of the cars with the highest value are very expensive supercars that just so happen to have two seats. The number of seats, color, or number of doors has absolutely no bearing on what an insurance company will charge you to insure your car.
The only car I've ever heard of where the seats affect the insurance rates is the Honda S2000 and that's not because of the number of seats, it's because of the price of the seats and their status as a desirable theft target. Seriously, the seats are so expensive and so easy to steal.
