No harm to do it. Won't get the 'performance' aspect of the header until it's tuned, however. And if you CEL comes on, say bye-bye to cruise control. Won't work until you clear the codes.
Honestly, at that point doesn't he feel the next step for a power bump would be a good tune anyway? That's the next logical step to get power out of the rest of the mods he may have

You'll be fine, since you live in FL you dont have to worry about emissions. So you can run without a tune. I'm sure your ECU will adapt. I ran mine for 200 miles before I got a tune.

It depends on lots of factors, including placement of second o2 sensor often aftermarket headers space the second o2 out of direct exhaust flow, type of driving you do , if you dont do much highway it seems to take longer to come on.

To be honest I haven't been driving it much. But right now the car is at the dealer for a p0016 code. Before that the car ran fine without a tune.

For some backstory on my car. I was one of the originals (August of 2012) and the early models all had issues with that code, I thought I was lucky that it never came on up until 40k miles. The CEL isn't due to running an untuned car with a full exhaust.
