Couldn't you use something like the PAC modules and pick what to use as you input device? I've used them in the past and had good luck.

I have a friend who is big into PCB etching - I'll hit him up to see how much it would cost to commercialize an etched board. The ICs themselves are dirt cheap but I'll have to tweak the schematic so that it's easy for the everyday user to select the correct output pin and adjust the resistance accordingly.

Are pins 21 and 22 installed in the factory harness, or do we need to either crimp pins on some spare wire and insert them into the connector, or use some aftermarket harness?

If it's the former, do you know what pins we can buy that will work?

I am not having any luck figuring out where to get extra pins. I will look at my factory wiring when I get home this weekend, but I doubt that Subaru would have included pins and wiring that don't go to anything.

I found the resistance values for the 2008 Impreza on MP3car

I don't know if that's the same for our car, but I think that might be a decent starting point to start figuring it out, unless someone can get their hands on a 2012+ Impreza or Forester SWC module and measure the values the Fujitsu Ten is expecting.

Considering how many of the twins have a Pioneer H/U installed from the factory, there are a lot of people who might be interested in that unit.

I REALLY like the cruise stick functions you showed in the YouTube clip. However, I'd only be interested in doing this mod if pressing the cruise toggle button to enable cruise mode disabled the head unit commands.
