I drive with stability and traction control off all the time for a few reasons.

My daily drive includes a few low visibility intersections onto a 50mph road. With the gravel that accumulates at the stop I literally can't get moving fast enough to safely join traffic without the bit of occasional wheelspin to get my tires back on pavement.

I'm also of the mindset that I'd rather learn the cars real limits instead of pushing the controls past their limits and relying on stability and traction control to keep me on the road. The simple fact of it is I'm never going to keep these on at the track and I'd rather have consistent results given my inputs.

Because of this ^. I use it when going up hills, especially helpful when there's a slow car that you run up on.

I learned to drive from my dad… so sport mode is pretty much a minimum. It's quite annoying when headed up to a wide open turn, with no cars anywhere, and the car fights me as I swoop around the corner… I know how to drive, I don't need the car trying to tell me otherwise and making me have to counter what it's doing.

VSC Sport mode on as soon as I start the car for normal driving.
All the traction/stability control aids turned off for autocrossing, and occasionally for spirited street driving.
On very rare occasions when I'm driving in heavy rain or traffic, I'll just leave everything on, but that seldom happens.
This is my first car out of 25 I've owned and half a million miles I've driven, with any sort of stability control, and only the second car with traction control. My Miatas don't even have ABS.

Vsc minimum. Sorry this is my first car with traction control. I am not use to it. Plus where I live there are some blind exits with a loose surface. When I first got the car that resulted in some oh crap moments as traction control kicked in and power went to 0 as cars charged towards me

also, what is everyone talking about with traction and stability not being fully off unless you "pedal dance"?

Pressing and holding the trac button at any speed disables traction and stability. As far as i know, everything is turned off because I've gotten all of my drifts in that mode without any interference

If you push it really hard in this mode it can re-enable traction and stability control. With the pedal dance that doesn't happen (Although you risk hitting Ice Mode which isn't much better).
