Really it comes down to what information they provide and what they include on their product data sheets. Mobil1, Red Line, Motul, Amsoil, Pennzoil and a lot of others are good at posting their data sheets with the relevant information.

And data sheets are always changing. Oils can be reformulated and the viscosity may change. Although if it's an API certified oil, it has to be resubmitted for certification if it's reformulated.

I tried copying a viscosity chart above but it didn't work. Here's a link:

Note that a 20 grade viscosity can be anywhere from 6.9 to 9.29 cSt's at 100C and the HTHS can be 2.6 to 2.9. That's the newest SAE chart which also lists 8, 12, and 16 grade oils. OMG, you run 20 weight? That is SO thick!
This is the "hotter" oil

Viscosity grade SAE J 300 0W-20
Density at 20°C (68°F) ASTM D1298 0.838
Viscosity at 40°C (104°F) ASTM D445 48.6 mm²/s
Viscosity at 100°C (212°F) ASTM D445 8.8 mm²/s
HTHS viscosity at 150°C (302°F) ASTM D4741 2.7 mPa.s

Pour point ASTM D97 < -50°C / < -58°F
Flash point ASTM D92 238°C / 460.4°F
Sulfated ash ASTM D874 0.8% weight
TBN ASTM D2896 8.4 mg KOH/g

The colder oil is thinner at 100C, but it doesn't list the HTHS. It also has a very high Viscosity Index which usually points to better quality base stocks. I'm guessing that it has at least some esters in it or is even predominately ester based.

Neither one appears to be very thick though (e.g. thinner than Red Line) and the visocisty is right in the middle with the hotter oil being very slightly thicker. Not sure if that little of a difference in viscosity is attributable to the actual thickness at 100C, but maybe the oil formulation itself.

The other thing about a high Viscosity Index is that high VI oils are supposed to have less viscosity change. Under hard use, a lower VI oil could thicken up quite a bit due to oxidation. This can be seen with used oil analysis, especially if you use a lab that tests for oxidation.

I'm guessing the cooler one is pricier. Is it a Euro oil or Eneos Sustina?

Yep, sustina. The other is motul 8100 ecolite.
