So lets say the ethanol sensor stops communicating with the ecu for one reason or another. Does the tune default to a certain map?

Just curious - should I be looking for a hot 12v source or a switched 12v source for this? Thinking switched, but I wanted to be sure.

That's a good question. I think we used hot but I'll have to wait for @cobrabyte or @Visconti to confirm.

I tapped into the radio, which is switched. If you tap into a hot 12v the display would be on even with the car off.

After poking around some of the other DIYs I ended up using the 15amp fuse (left side closest to you) which seems to be switched as well. Sensor is up, just waiting on the ECU harness to finish out the wiring, then I sit and wait for a tune to head over to the local E85 pump

I imagine you'll need the tune since @Visconti is repurposing another sensor's feed for ethanol content. The CEL is probably being kicked-off due to the ethanol content sensor sending data that's outside the range for whatever sensor was overridden.
