Maybe the tire pressures are lower. Try getting them up around 35 or 36 psi and you'll probably be able to break the rear a bit more easily.

Like others have said there are a couple of ways to break grip. You have to realize how grip works. Like for example lift-off and breaking through weight to the front of the car, giving the front more grip and the back less.

You can also add throttle and try to break the tires grip from the road. But mashing the gas I can only imagine needs to be done very carefully. Control is the key. Lift-off throttle is probably the first place to start since it transfers less weight than breaking.

I learned some of this in a rally school. It it much more noticeable on dirt/gravel which is a lot looser. Just lifting off and adding in steering would swing the back end. The rally concepts definitely translate to any driving. Rally driving was all about working the gas and brake to send the grip to the back or front. And in rally, braking is huge is getting the desired slide through a turn.

Weight transfer is big in getting the tail to slide.

Find a local autocross to enter?
I finally got my FR-S to one a couple weeks ago, the back was all over the place! I was a bit too much on my first run. My FR-S did come with the all season Bridgstone Turanzas.
