The first chart displays the amount of force the shocks generate vs. the piston speed of the damper. Not vehicle speed, piston speed. So if the shock is compressing at 1 inch per second, the shock is generating a force of approx 25 lbs. That's the top half of the chart...compression. Rebound or extension is the bottom half with negative force values as the shock is resisting extension.

Lower piston speeds = body roll, higher piston speeds = bumps.

You can use this information to get an idea of how much spring rate the shocks can control effectively. This post talks about that a bit:

But there's much more reading you could do.

The other 2 charts are just showing the spring rate of the various springs. No direct correlation to the shocks.
