Fun fact: "Silver Maple is often used to make syrup instead of Sugar Maple in colder areas where Sugar Maple sap does not sweeten very well (like the Canadian prairies)."

I always had it backwards, thought y'all used sugar maple up there, figured it only took 13 gallons of sap to make 1 gallon of syrup (vs silver maple that needs 26 gallons of sap for the same yield). Never realized that sweetening had a say in the process.

It was more of a process duration guilt. All that time waiting just to have it poured onto breakfast (albeit the most important meal of the day).

A lot of whiskey was drank while waiting. Not by me of course but believe me there was not one moment of waiting that was wasted.
