The two events might not be connected.

Or, possibly, because travel of the throwout bearing is decreased, it may be hanging up on an already damaged transmission front cover.

There have also been reports of friction plates binding on the input shaft.

It's all conjecture unless the problem can be reproduced at will.

When it locks up, do you think you would be able to preserve it in that state long enough to pull over and pop the hood? Sounds whacky, I know. But if you can, it would be worthwhile to check the clutch fork for necessary free play. With the clutch pedal all the way up, you should be able to pull the end of the clutch fork forward to compress the slave cylinder. If you can't, then it's binding down there.

Which way do u turn the rod to have higher engage point. My engagement point is low near the end of peddle travel.

I don't quite remember, but you can lay a flat ruler on the brake pedal as a reference point. You'll be able to see the clutch pedal rise/lower better that way.

I just stumbled across this. Didn't catch your edit. I quoted myself below because I think it speaks to your issue after adjustment. I am guessing that the way you had it adjusted, the piston was not able to fully extend. This keeps the reservoir check valve from opening and causes the clutch to "pump up." Sounds like you were right on the edge so sometimes it opened up and released the pressure with a thud.

For all reading this: The piston in the master cylinder MUST be allowed to fully extend when the pedal is released.

Anyone had an issue with adjusting it too far? I did mine so it was flush with the brake pedal. The clutch engagement is almost instant however it is nearly impossible to spin the tires in 1st gear with a 3.5k drop. If I drop the clutch at 3k it grabs and then it takes a few seconds to bring the rpms up. It isn't stalling just seems like a long delay.

I'm thinking I adjusted too far? However the clutch isn't slipping nor is it dragging. I also have no slippage WOT and under power which is why I don't think it is the clutch slipping, and more the engagement point be incorrect. Just wanted some thoughts before I mess with it tomorrow.
