For MCs it's just replacing the oil. Pop 'em open, drain old fork oil, replace with new oil, button up. There are even drop in emulators for dampers with only preload adjustment to gain some control over compression and rebound (though not as easily adjusted as cartridge forks that don't need to be opened up to adjust the same things}.
Don't forget replace seals and bushings. The OE shocks could be serviced, we used to valve and rebuild them though not as often as forks. I'd be curious to crack open the new air forks they have been running.

A couple of rubber seals and copper bushings too
I haven't seen anything about air forks. I guess I haven't been paying enough attention
