That actually looks pretty good with the 16".

Though, I might be partial to the "Racing Hayashi, Panasport type rims" since my NA Miata days.

Need some help guys. So I took my car into my local shop, Speed Element, and had them do my alignment and height adjust. We decided that the car looks good with a 1 finger gap.

The issue I am having is with rubbing, even with ridiculous amounts of camber...
My current setup

Tein Street Flex Coilovers
SPL LCAs
Volk TE37sl 18x9.5 +40
Michelin Pilot Super Sport 265/35/18

Current camber f/r: -2.9,-3.7
Caster front left: 5.3
Caster front right: 6.1
Front toe: 0
Rear left toe: 0.12
Rear right toe: 0.09

We did a fender roll as well as cutting the tab in the rear fender yet I am still rubbing... Can you guys with similar setups go into detail on what you guys did to make it where it doesn't rub?

Why so much camber in the rear? I ran the exact wheel spec with 255/35 rs3's, same ride height with only 2* camber and never rubbed.

Have you taken off the wheel to check where it's rubbing? I'm almost certain it's not rubbing on the fender because there's plenty of people running the same spec wheel/tire at approx. 2* camber without problems, including OP.

Ditto. I'm guessing it's rubbing on the inner fender liner. I have -3.2* rear camber on 9.5 +38 and 255/35 and it only rubs inner fender liner on hard, sudden bumps. I am tucking tire and there's some room between the fender and the tire still as I have not rolled the rears.
