So spent some more time mucking with the final seat bolt tonight. It's beyond the tools (or maybe just talent / skill) I have to get it out, so I'll look into getting replacement bolts tomorrow and then call around to shops to see if any are willing to get the last one out. I'll admit, I did not expect unbolting the seat to be the difficult part of this. Probably should have read up more in advance...

It took me 3-4 hours before I finally got the bolt out. I used to live in the middle of nowhere, so this is how I fixed my bolt...

I threaded a nut on it and ground the head to the same size as the nut. It still has plenty of threads in the hole.
