OFT can easily log oil temperature, and it's not that hard to do it.
You can skip the whole saving file and pulling it off to a computer if you just want to watch temperatures in real time. I've had a thermostatic oil cooler on mine for about 5 years with zero issues, oil doesn't get up to temp on short drives in the winter, but it never did before either.

I read the forester oil cooler is more for warming up the oil during street driving and provides minimal benefits for track. However, for a street car, warming up the oil sooner will help engine longevity.

What make/model is your oil cooler? How are the components holding up to the road salt? What temp is the thermostatic plate set at? Even in -10c, I found that it will take 10-15mins and the oil temp will come up to normal. But this is consistently under load (car moving and not just idling).
