I love it when I go out of province and can order a burger cooked properly. They face huge fines if they get caught serving one under medium here. Although it is actually a required temperature not a degree of cookedness (my new word I just made up).

Isn't the internal temperature directly related to the cookedness though?

Yes, most certainly. I was just clarifying that the law doesn't say "medium or higher" it says "XXX degrees or higher".
