Hot take - grilling in general is overrated.
Exceptions are ribs, pit beef, and certain things cooked by skilled individuals. It can sometimes be magical. Learn to cook well on a cast iron skillet in the kitchen first. Best steak I've ever had? It wasn't grilled. Best chicken I've ever had? Also wasn't grilled. Best hamburger? Cast iron skillet baby. Grills are a fun social experience and in the right hands can produce some really awesome food. But a lot of people just suck at it and I'm tired of eating your dry ass chicken and hockey puck hamburgers. - Andrew....who's about to get metaphorically grilled on here. |

ROFL - yeah. Hand a newb a cast iron skillet and watch your kitchen smoke up real fast. Take the battery out the smoke detector for sure.

You're right though, most cooking shows are scripted for convenience using typical kitchen appliances and heavy pans to sear meats and oven finish if needed. Here's my favorite way to grill burgers that I haven't equaled with any other cooking method including charcoal. It helps to age the formed burgers in the fridge overnight that keeps them firm on the grate and concentrates the beef flavor. 53M+ views: |

Grilling properly is an art hence why some will prefer the pan. When I'm cooking Top Surloin properly (baseball cut charred rare) I had the fire dept show up once. Apparently one of my neighbors wasn't bbq savvy. Last edited by TommyW; 06-04-2020 at 02:28 PM. |

I messed around with a new burger recipe this evening.
Two finely shopped pieces of bread, milk, salt, pepper, worcestershire, garlic, ketchup mixed in with the beef. Turned out pretty damn good. I used an extra garlic clove, I probably wouldn't do that again |
