Is there any way to lift the brz up an inch? or maybe a rally/off road coil over kit? what is the best suspension set up for potholes, dirt roads, bumps, dips, catching air, etc....

Subtle Solutions has strut spacers. I ran King Springs on my STI, gave about 1.5" of lift, it was a blast.

Don't do that.

Take a look at the Flatout coilovers if you wanna go up.

Here I was thinking that the standard OEM suspension setup was default 'rally' spec, gravel road!

Highly doubt it. This is no wrx/sti/evo, where rally use might be way more common. Too little suspension droop travel, too little ground clearance. Main target for suspension setup most probably tarmac tracks, not road-hole ridden bad roads and high jumps.
