That is the handy work of my dear mother. Since being laid off I have been staying with them since my parents house is about 2 blocks from my house I am remodeling. Been eating good.

No picture, but I had a banh mi today for lunch. Grilled port, daikon, onion, carriots, and jalapeno on a nice fresh bread roll.

I go to this place once or twice a week. Super good, fresh ingredients. The two Vietnamese ladies who work there are very nice and they remember my order (basically same sandwich sans cucumuber). Sometimes when it's busy they'll even start my order ahead of people who ordered before me.

I used to only go once a week or every other week, but it seems they've had a lot less business due to COVID so I've been trying to go more often to support.

Anywho, it was great. Really hoping they don't ever need to close down from less business.

Ribeye for dinner tonight, basted in butter, garlic, and thyme:




Usually I salt the steak while it rests to bring to room temp from fridge temp and it's fine. But this time I guess I used to much because the end flavor, while still very tasty, just was a bit on the too salty side.

Also tried a new roast potatoes recipe for the first time:




Basically boil them in water with salt and baking soda, drain them and let them sit in a mixing bowl for a few minutes to steam. While all that is happening, in a small pan fry some garlic and an herb (thyme here but could use rosemary) to infuse some oil. Put the oil in the mixing bowl or a separate one, but then combine. Then rough them up in the bowl with the oil so that they get a bit "messy" with bits of mash and whatever all over. Then place them all in an oven and keep flipping them every 20 or so minutes for about 45-50 minutes.

Then return to the mixing bowl and combine with the garlic/herb bits used earlier with the oil.

Those potatoes were delicious. Crusty/crunchy on the outside and hot and creamy on the inside.
