Well, that's another thing I might put on the list of new kitchen tools to get next month after I move in. Also, I've done the same. 4qrt dutch oven works perfectly with a 2x scaled up version of the recipe.

they used to be used for shaving. and there was a slot in old medicine cabinets for ' safe razor blade disposal'. you know, by depositing them in a wall...

Yeah, I've done 4-5 day cold "ferment"'s in the fridge so far. Definitely adds flavor.
