Looking to grab a set of 17 x 9" +35 for my 2020 BRZ w/ Performance Package. Sounds like I would definitely want / need camber adjustment per another post as well as chatting to Apex folks on the phone who were super helpful.

Is that better achieved using top hats / camber bolts, or at this point should I just upgrade to coilovers (which seem to have built in camber plates at the top?). I imagine overall handling and adjustability would be better with the coilover setup.

Please keep in mind that we recommended the 17x9 ET35 because of your Performance Package struts. If you do go to a coilover setup, the 17x9 ET42 wheels will be a direct fit and will require less camber as they will sit 7mm further away from the fender.

I'd like to clarify that if you do anticipate ever having more than 2º of camber in the front, you might prefer to get et35 wheels now.

I have et37 9" wide wheels with 245 tires and -3º of camber now, and the fronts are substantially tucked in (negative poke). I do rub at full lock, e.g. when spinning out at AutoX. Et42's will be tucked in by some 5 mm more, and will be that much closer to the chassis. Similarly in the rear, I wouldn't go any higher than et40.

I guess I should clarify goals a bit here:

Goal 1. I want to set up my car to handle as best as it can for road racing and optimize for control and good lap times (Laguna Seca primarily, as well as Sonoma, Thunderhill, etc).
Goal 2. I want to avoid rubbing in any situation (fender or inside).

Given those two goals is the right setup:
1. Keep performance package, Get EC-7R 17x9" +35
2. Swap to coilovers, Get EC-7R 17x9" +42
3. Swap to coilovers, Get EC-7R 17x9" +35
4. Something else entirely? Part of me is still debating grabbing a 17x8 wheel for ease of fitment but suspect the loss of the additional inch would negatively impact goal 1.

I probably should have started this discussion off with the fact that I am open to swapping away from the PP and buying coilovers especially if it improves outcomes for my two goals above. My budget on this project is not huge but I don't mind spending especially on wheels/tires/suspension given the car's intended use (track/fun).

There is nothing wrong with running 17x8 and keeping your current PP setup. There are several options to get camber without getting coils. Peddler top hats plus camber bolts is a good combo. 17x8 can run up to 245s but 235s are a better fit. Now of you want to experiment with something larger than 245s you should just go option 3 now

Do you plan to run with 86Drive Challenge?
Have you considered intentionally limiting yourself to the Stock class for now? Or at least the Street class?
"As best as it can" will probably require higher grip tires, but that might be counter-productive for a beginner (I don't know your experience level).
Their Street class is very competitive and my experience with them has been very positive.

Don't know about other tires, but GT Radial SX2 245/40R17 will rub at least in one place no matter what you do. It's not too big of a deal.

Thanks @timurrrr and @APEX Race Parts. I got the 17x9 +35's and couldn't be happier. The +35 offset looks great with no spacers required (do need adjustable rear LCAs or camber bolts). Running about -3.0 in the front and -2.0 in the rear.

Particularly love the clean look as well as color options (the gold in particular stood out to me and looks fantastic). For a track car I really like the 17's, the size looks great and not too small. Wouldn't hesitate to go 18's either if saving the few extra ounces is not a concern. Folks at Apex were super knowledgeable and helpful.
