I'm racing with 6 degrees advanced over stock on 100 oct (doesn't burn as cool as E85), in a draft on a 90 degree day on an OEM radiator and temps aren't a concern.

Just pulled my data from Portland: 90 degree day, lots of time drafting, 30 minute sprint race. Never saw a water temp above 210.2F on the hottest lap. Oil peaked at 244.4 on that lap as well with center mounted greddy oil cooler. This was with 0w-40 oil.
Another data point. Out of all of the open lapping I've done, I haven't reached beyond 205F with a center mount oil cooler (in my car Perrin).

I've seen steady state around 199-201 which a couple peaks and dips along the way. Oil temp is sub 230F even on hot and humid days

Still no oil in the coolant or vise versa. On the street water temps sit in the 160's even on a 90F ambient day as long as I am moving. Pretty sure now the thermostat is not opening up all the way when hot. It should be here this week.
Boosted cars running stock rads without issue are the exception, not the norm. Either there is extensive supporting mods, or the driver is not as experienced, perhaps both.

In the case of my car, while I'm on a stock radiator, I have every other supporting modification known to man, including a fully ducted cooling stack and a divorced oil cooler.

I do eventually overheat; my threshold is between 107F and 115F. Under 107F, I don't overheat at all, over 115F, I overheat for sure. I don't know exactly what the threshold is, because I haven't run any track days with a temp between 107F and 115F to find out.

At 107F, I don't overheat with the heater off; at 115F I overheat, even with the heater going full blast.

The above data is at my high boost setting (~360whp).

Sounds like it's stuck

Sounds like Schrodinger's thermostat: It's neither closed nor open.

Thermostat change yielded no improvement. 70-75f ambient. Still hitting 235 in a 25 min session. Water pump is next. I am also going to test and verify my sensors with a thermocouple.

Aftermarket coolant gauge.

Glad you got it figured out!

Going off your thread title, I want to chime in on my setup.
I'm curious how my Edelbrock performs on the track with heat management. I have the Jackson Racing Rad/OC combo unit along with hood vents.
I do feel like the system can get heat soaked, and i'm curious what else I can do to mitigate that. Again, the heat soaking is fairly anecdotal as I am not currently datalogging while it is happening. (only had the new BRZ for 4 weeks)

That said, I have some track days/hillclimbs coming up in September so I want to get ahead of any heat issues. Picked up an OBDLink MX+ Bluetooth unit that will help monitor temps.

AIM Solo 2 DL.

You can show coolant, oil, and intake temps simultaneously, as well as more track data if you want.

You can also do the same with Ecutek Connect, and any old phone you have, and a phone mount.

More powerful fans and a good fan shroud can help.

I'd just monitor it on your first time out and see what it does. What app are you using to track it?

OBDLink for diagnostics, Dash Command for live data, Racechrono for track telemetry. Considering an external GPS because ORP doesn't have the best GPS signal using just a phone.

I also just picked up a dji action cam for in-car POV

I am using the XGPS160. That is what the holder on my dash is for.

Maybe @timurrrr can comment it, but I thought you could show OBD data on racechrono. It will log the data, I haven't messed with it a bunch yet as far is getting the displays setup.
