Probably any of 3 things:
1. We buy bulk yeast (from King Arthur Flour) and freeze it in an air-tight container once opened. While out of date, it still works better than the packets you get at the grocer
2. This was baked in a ceramic dish with lid (similar to dutch oven)
3. Practice


Possibly the flour matters, which is also King Arthur.


They're as delicious as they look!

All this is by hand. We do use a stand mixer for some breads (wife made a buttermilk bread over the weekend in the mixer). KA all purpose for the shepherds, and a combination of KA bread flour and whole wheat for the sourdough. The sourdough doesn't even get kneaded - total process takes nearly all day, and the elasticity is built through a series of stretch/folds every 45min or so.



King Arthur ships, and sells bulk yeast... I love their rising buckets and bread whisks. They also sell 00 flour (double-zero) which makes an amazing tuscan style pizza crust.

There's currently a guy in my office at work who I've seen before but never really heard speak.

And as I'm listening to him speak to someone over the phone, I thought.. "huh... that voice sounds reeeally, eerily familiar..."
