Tried making a verde pozole (posole?) tonight for the first time. Came out pretty good. I think I should halved the can of hominy, though, because for one thing it was a lot more than I expected, and I also think it soaked up way more of the soup than I would've liked.

Flavor profile was pretty great, though.

I also added some homepickled red onions as a topping.

Not pictured: cilantro I forgot to add before taking the photo, and some lime juice I squeezed over it before serving.

I think I know how to bring him back! I flew the jet to Green Bay, WI and ordered a nice fresh Walleye with some duckfat potatoes. Come to think of it I probably flew over his house on the way... not that he would notice when I was 43,000ft. (We cut though )

No pics but made chili tonight. Tried adding a hatch chili but I suspect I needed two or three for enough flavor to spread through the whole pot.

But the most exciting thing was trying a new chef knife I just bought recently. It's the real deal, slices through all the veggies with basically no effort. Really need to be careful though otherwise my next dish I post on here will come with a lopped off finger or two as a topping.

Sharp knives are much safer than dull ones. After fulfilling that basic requirement, handles become key. Literally everything I use is too small for my hands. Not bragging. It sucks almost as much as being too tall. My world would look very different if I could design it for my dimensions.
