I've had black cold brew from high rated places before and I really don't like the black flavor. Everyone says shit about "hints of X fruit flavor, nuttiness, blah" and the most I've tasted out of some cups has been almost like paper lol. It was bizarre.

But I don't mind it at all when it's cut with some kind of dairy. Problem is I'm lactose intolerant and none of the non dairy options taste good to me.

These are the same people that say "You have to try this beer. It is brewed from unripe walnut shells soaked in pure pine pitch and ground with the finest Tibetan grind stones. You'll love it!"

It's true.

The only time I've ever been like "hey, you might be onto something here!" is with my favorite hefeweizen; people do mention it tastes like "banana peels" and at first I honestly couldn't tell you what the heck that even means, but after drinking it a bunch I can say I've noticed something along those lines.

As with most things... It's a learned/trained skill and not everyone is equal. It starts with sense of smell though.
As for coffee or beer or whatever... Things on the bitter/sour scale can overload people... I can't drink much of hoppy beers, for example - that just overwhelms flavor and tastes horrible to me. I get more flavor out of wine than coffee, but coffee is super picky about preparation and roasting. I have prepared an espresso shot I would have sworn was lemonade... Not my liking, but interesting. Fiddling with roast changes so much, I usually figure something out on my last batch of a bean.
In the end... Don't sweat not tasting subtle flavors which may or may not be present in the cup you're drinking. Especially coffee, which is evaluated based on special brewing and cupping... Not the process you usually taste.

for the last 20 years or so, i've been wanting a bmx bike with disc brakes. why? i dunno, just not common.

i've been watching berm peak on youtube, and he had an episode on hydraulic disc brakes. got me thinking about upgrading the mountain bikes brakes from cable-actuated to hydraulic...

but then around the same time, i had to move the bmx bike around the basement for some other projects, and the cantilever brakes barely do anything. it got me thinking.

that brought me to today. i couldn't let the idea go. had to see it through.

what will i do with this? no idea. but it's mine

lol, it works like a brake ought to. a bit more pull than i prefer, but still plenty fine. i can feel it grab, it can lock up the wheel when i want it to.

only thing is that it makes a ton of racket. not sure if i need to bed the pads more or better, or if it's harmonics in the rotor...

Probably a bit of both. I don't think I have ever got the front on my DH bike to chill out. It makes all kinds of noise at low speed.

i'm also running one of those 'rainbow' rotors. so i'm suspicious it's not really as good as a name brand rotor.
