How did you guys end up tuning the car with the provided Cosworth tune? Did you own a ECUtek dongle already or did you just visit a tuner ?

I thought the Cosworth packages only came with a USB stick with the MAPs and no dongle

What they give you is all the hardware for install i.e cable, dongle(no files on it). Once you get that you email Cosworth and they email you back the actual tuning files which you then install and run.

When I ordered the Stage 1.0 kit all I got was a high flow filter, thermostat, and a paper which told me to email them. Oh and the awesome plaque. So I basically had to buy the dongle and cable elsewhere.

I bought the catback, airfilter and ecutek kit all individually. Thermostat ($100 bucksish?) is on the list, but it is not critical at this point. Plus it seems like a bitch to install....
If you are running the cosworth tune you should install the thermostat. The calibration from cosworth takes into account the lower water temp when setting up the spark.

That's too bad. It comes with the 1.0, so I could justify the cost.

Is running without the thermostat that big of a deal for right now? I haven't experienced problems by not running the thermostat. Care to explain more?

Just to add to that I didn't run the thermostat till I put the supercharger on. So I ran for a good... 4 months without it. Maybe more.
