I'm still trying to find a new taco spot or two closer to my new place. It's not very convenient to drive 20 mins each way to where I used to live.

I followed this recipe to make a (triple) smash burger for the first time. Coincidentally it was also the first time I’ve used my cast iron pan on the electric stove top. I also made a mostly similar burger sauce.

I still had supplies, so I made a double tonight:




Still working out some kinks in the process, and for whatever reason I totally screwed up cutting the onions.

But flavor profile was on point.

I actually still have more supplies for maybe one more night this week too.

Tried a simple pasta dish tonight. Simmer some olive oil in a pan with sliced garlic, throw in cherry tomatoes, let them get hot so they kinda pop/are squishable. This makes a sort of rough sauce. Add cut up basil and season (I also added some crushed pepper flakes). At the same time, cook some pasta. Once pasta is almost cooked, transfer it to the pan with the "sauce". Mix, let cook a bit more, add some excess pasta water to sort of deglaze the tomato/oil/garlic bits from the bottom and make
more of a sauce out of the whole thing. Added some grated parm reggiano on top.

I basically halved the recipe. Ended up with a bit too much pasta for just myself and could've used maybe a bit more tomatoes for more moisture.

Pretty solid meal.

My middle son and wife are visiting. Made marinara with meatballs for spaghetti and meatballs with a fresh loaf of bread. It was very yummy.
