They're also called door-checks.
They are the metal-and-plastic pieces that are supposed hold the door at specific stop positions and keep it from slamming shut |

Have you ever worked on the interior of your car with 1 or both legs outside of the car and suddenly find the door slams your leg(s) with the force of a freight train for no apparent reason???
The later model door checks (stops) are more effective at saving shins than the early ones. |

My drivers door has trouble staying open. Is this a door-panel-off job? Or a door off job?

If I remember correctly, from when I looked Earlier this year, you just have to take the door panel off. You could pull the engine and take the axles out but that would be a lot of extra work.

There's a thread somewhere about how to shim them. I assume new ones weren't available then. I'm glad to read that the new ones hold better. It's a flaming pain to have the doors keep hitting me. That's the thing I most dislike about the car. I just ordered a new one. Don't need passenger side. I've been putting off the job out of fear of that sticky black stuff, but I understand you can get to the inside part by just removing the speaker.
