Ghost in the shell
Black Lagoon - currently halfway through first season, Revy OP
Full Metal Alchemist - original and Brotherhood
Aldnoah Zero
Psychopass
Anime with mechs and robots

Didn't like/got bored:
Naruto
SAO
One Piece
Knights of Sidonia
Attack on Titan
Gurran Lagan - i understand the point was to be ridiculously over the top but it got tiresome
Anime with animal or half human/animal characters
Anime based around young kids or early teens

I'm basically looking for giant mechs/robots, modern day or futuristic, guns or somewhat realistic weapons, and characters that are at least 20+. Red or purple haired waifus are always a plus
I think you'll have a hard time with the 20+ characters. There are practically no shows like this. Ones that you just don't know the age though... those are plentiful. Isn't Evangelion about robots?

Some suggestions based on the likes/dislikes you listed:

Appleseed
Appleseed Ex-Machina
Appleseed Alpha
Broken Blade
Canaan
Cowboy Bebop (the most promenant anime masterpiece...have you seen it?)
Ergo Proxy
FLAG
Gunslinger Girl (season 1 only - and yes the 'main characters' are children, but their handlers are older adults and integral to the story, absolutely best girls with guns title that has ever been made and is an anime masterpiece that is about ethics, cyborg/bionic use of children, and human relationships. AVOID season 2...they went a different direction on that one.)
Jin-Roh
Macros Plus
Macross Zero
Moribito: Guardian of the Spirit (Balsa is right up there with Motoko Kusanagi from GITS...)
Patlabor movies (1, 2, and WXIII) and TV series
Samurai Champloo
Space Pirate Captain Harlock movie
Sword of the Stranger
Vexille
Viper's Creed

And if you want to expand your horizons some I'd recommend these:

5 centimeters per second
BECK
Cashern Sins
Kids on the Slope
Puella Magi Madoka Magica
Redline
Time of Eve
Tokyo Magnitude 8.0
Usagi Drop
The Wind Rises

I've got a lot of researching to do now!

Appleseed - people have told me to check this one out before so i'll get on that
Cowboy Bebop - i watched it on and off when it was on toonami. I think I will eventually get around to watching it all.
Macross - as in robotech macross? if so will definitely watch
Moribito - got about 2-3 seasons in and then kinda got bored. I'm a fan of the badass silent characters but it got a little too slow paced.
Patlabor - saw it mentioned a few times earlier in the thread, will check out.
Samurai Champloo - another one that i caught episodes here and there on tv
Space Pirate Harlock - really enjoyed
Vexille - watched this more times than i care to admit for the opening power armor sequences

Guess i've watched more than i thought lol. Thank you very much for the list.

One punch man - still haven't given it a chance even with all the rave reviews

This are three shows I can thinking of that are a bit newer with what kind of anime you want to watch.

Ok peoples. I have a recommendation challenge for you.
I want something sexy. I don't want hentai; I want implied eroticism.
To be set against an interesting story that is not romance.

The Melancholy of Haruhi Suzumiya was close. I thoroughly enjoyed the first season but I would like just a little more......stuff

Without prior research of what The Melancholy of Haruhi Suzumiya, I will suggest Monster Musume. Probably way off from what you want but just putting it out there. It is definitely an interesting story and it is more rom-com than true romance.

Shuffle! is what I would recommend. It is a harem, and ecchi, but also the best example of either I've seen. The characters are pretty much the usual tropes, but it has a solid story, the emotions are more real than you typically see, and it even manages to be somewhat intense at times.

It also features my favorite final choice in any anime thus far, but I won't spoil that.

I watched Shuffle! Expecting a sexy romcom harem and was not at all pleased with it. Did not find it that funny(personal taste), or sexy with little to no fan service, didn't like the ending. Personal opinion here. Don't mean top shit on Nevermore's suggestion but if I'd known shred of time I would have picked something else
