I suggest that you are much larger than you realize. Go with no less than 600 cc. Even then, especially because of your off-road experience, you will soon outgrow it.

Went to the track yesterday
first time out with the car, no issues once so ever

Finally!

16 years of modifying and crashing/flipping/ruining cars and all that experience ultimately let me build something that was hearty, reliable, and damned good.

Fastest Lap was a 2:15 on buttonwillow's Number 13 course. On my tiny 225's kumhos

so happy I basically cried as i left. It was a dream of mine to race a car, i built, at a "big boy" track

and I drove it there myself and drove it back. about 225 miles one way.

drank like freaking 30 gallons of e85 though

I really need to do this "dieting" thing they talk about. But it has "die" in it... Sounds dangerous.

It's not so bad and it is relatively low effort. Just more planning.

I have been going to the gym 4 times a week since May, changed my diet, almost cutout beer, and I have.......gained 3lbs

I'm talking about your height. 200 lb at 6 feet isn't bad at all. I'd say the same if you were 20 pounds lighter.

Any suggestions?

You might not like the cost of insurance or maintenance but you should look at a used Ducati Monster 796. It's a naked sports bike with lots of low down grunt. You can ride it hard in the twisties or easy on city streets. With aftermarket exhaust it can thrill you at any speed.
This is my wife's bike. Yes, it's for sale but it's here in Canada and you can get them for less in the US.

Actually, my friend is thinking of upgrading from his Monster (idk displacement) to something faster. I'm fairly certain he would sell me his, which other than being dropped once the day he got it (and yes, I was there), I know is in really good shape and has all the 'you should do this at some point' maintenance/upgrades.

Edit:. And by dropped I mean mildly crashed.

That really depends on which 600cc machine you go with. Any modern 600 supersport will/should keep you entertained and/or can cost you your license.
I'm 5'4" and 200 lbs and have had lots of fun with my 2013 MV Agusta F3 675 triple.

My buddy has a 696 that I ride on occasion. You can actually get them pretty cheap. They are great bikes but the riding position is a bit bent over and cramped like a super sport. The 696's are also not too bad on maintenance. The only thing is with any Duc, the valvetrain is a bit funky and you may want to take it in for valve adjustments. Anything else on it is pretty strait forward. The low end torque on them is pretty awesome too and they sound amazing, even stock.

Well, I think that goes back to your point, I should just sit on a bunch and see what I like. Still need to get my own helmet and all that anyway. And probably should figure out when I am moving... And wait for after that... Sigh.

Yes! While I still can. Both these bikes are up for sale. (I may even part with my 1998 Ducati 900 SS FE. After that it'll be my acoustic guitar collection. I have to raise money to pay for a complete new septic system. Because my property backs onto the river I have to have a super duper duty disposal system. sux to be me...

Just because you're retired, do you NEED a cart to move two buckets around?

I see a walker in your near future. -
