Gear pump is a positive-displacement device. Without the bypass valve, it would pump the same volume until downstream pressure increased to the point of breaking the weakest link in the circuit. Think hydro-lock. Something's going to let go, maybe the pump itself. Word on the street is the bypass (safety) valve opens at 140 psi, so no worries there. Adding a second oil cooler in parallel actually lowers the head loss. Think about the same flow rate going through a fatter pipe. It slows down. In your case, the only significant restrictions are those banjo fittings. I'm not a fan but, as proven in your pressure measurements, they're just fine. I remember when I first sprung pictures of my setup. People harped all over it. "Oh no! It's going to blow up!" SMH... You're golden as long as you don't eat any rocks.
