The King Arthur site is the best. Lucky's here carries their flour and I just got some KA all purpose. Up till now I've been using Gold bread flour. Yea, I can only get packets at my stores, I'll have to order some bulk yeast online. Practice, I hear that. Do you use a stand mixer or hand kneed? Warm bread out of the oven is heaven. |

KA all purpose for the shepherds, and a combination of KA bread flour and whole wheat for the sourdough. The sourdough doesn't even get kneaded - total process takes nearly all day, and the elasticity is built through a series of stretch/folds every 45min or so. King Arthur ships, and sells bulk yeast... I love their rising buckets and bread whisks. They also sell 00 flour (double-zero) which makes an amazing tuscan style pizza crust.
