However, I'm assuming with the cusco plate, which is longer, I should be able to use more of the front of my foot as opposed to the middle and hit my heel at the bottom of the extended plate.

Coincidence that I just installed mine today and then came across this thread, lol. I used a punch and a hammer to remove the pin. Just be careful. If the pin gets misshapen in any way, it will be a PITA to remove.

The stock pedal was ok, I expect this to be an improvement over something not bad to begin with. (Haven't driven it yet.)
