To answer the OP's question: this generation of BRZ will not receive Eyesight.

I'm guessing your co-worker had a different brand other than Subaru? Our cars use stereoscopic cameras and 3D processing, so it would be highly unlikely to activate front end collision prevention because of a bag. Systems using radar or lidar would be more susceptible to this.

And yes, you can defeat eyesight features. Lane Keep Assist is off by default, and automatic braking can be turned off as well even on the fly. Would definitely be advisable if you're sticking the nose of your WRX up the back bumper of that poorly driven Ferrari at the track day.
