I guess it's safe to say Pilot doesn't work for United, since they recently ordered all employees to be fully vaccinated. The question is, if he was flying 20+ hrs/week or whatever a full workload is these days, and where he wanted to be, would he quit over a vaccination mandate? Interested to know.

Is that what doctors and medical authorities are doing? As a pilot you obviously understand scientific principals as they apply to your work and must be fairly intelligent. Doctors do the same, for their work. I wouldn't ask a doctor to fly an airliner or a pilot to advise me on health concerns.
Perhaps you should relinquish decisions outside your area of expertise to people who are properly qualified. This is not intended to be rude or insulting in any way. Some people's egos won't allow them to acknowledge they are not the authority on everying in their lives.

I would and did. I selected a fellow pilot to perform a VERY complicated heart surgery on me involving a tricuspid repair, dual atrial reduction,and dual lead pacemaker implanted within my lower ribcage back in 2015. You'd be amazed at the number of pilots who are excellent physicians and vice versa.
