Just made a bottle of cream soda. Decent vanilla and sugar. Not amazing but a good start.

Do you guys make a simple syrup with the sugar first or just straight-up sugar?

Use two bottles. Pour the sugar and flavor into one and make soda water in the other. The secret is to pour the soda into the flavor s-l-o-w-l-y so it has a chance to stratify. Then, in the later part of the pour, the CO2 stays in solution. Cover and shake to dissolve the sugar. Be careful opening. It'll be full-on fizzy no matter how cold you keep it.

I use a kitchen scale and funnel for the sugar. 1 cup is a smidge over 200 grams. I mix together about 180 grams of sugar with a packet of Kool-Aid because I like it a little tart. 92-ish grams of the mixture per liter bottle.

I don't remember, and don't remember if I put anything else in it. It was a long time ago.

I remember making all kinds of soda with the Old Fashioned Homebrew extracts. They made all sorts of flavors. Go to any homebrew store and I bet they'll have them.

I've gotta figure out the right way to make soda now lol.

I made their brand Dr. Pepper equivalent (Dr. Pete lol) last night and it was great for what it was and the amount of carbonation was perfect. I probably had a glass and a half of it, which left ~1/2 the liter left. I made sure the cap was on tight. Today, not even 24 hours after making it it seems like it only has maybe 1/3 the carbonation. I don't think normal plastic soda bottles go flat that quickly. Maybe I should only flavor some of the water as I drink it and then slightly re-fill and re-carbonate the bottle as I go instead. Problem is it means using a lot more of the CO2.

A few days ago I made a meatloaf for the first time in years. Ground beef, fried onions, garlic, jalapeño. Used panko, some milk, and an egg to bind. Then for the last ten or so minutes I glazed it with a new BBQ sauce I got a while back but hadn't opened yet.

Super good.

Then today I decided to make some breakfast burritos for the first time. Not a big breakfast eater but been looking for things to make that I can eat quickly through the week. I had one today and made three more to be put in the fridge. Pretty basic stuff. Scrambled eggs, slow-fried thick cut bacon, hash brown, jalapeño, and cheddar.

I just bought a bourbon vanilla extract from Trader Joes today (so expensive ). Will try making this today or tomorrow.

Only thing is I only have one SS bottle at the moment so I'll have to make do with a container or something.

yay bioengineering!! i remember when everyone was terrified of bioengineered food. messing with mother nature and all...

it'd be terrible if it didn't taste so good.

tonights snack, a cara cara orange--looks like a grapefruit inside, much sweeter than a normal naval orange, with a cosmic crisp apple-- sweeter like a pink lady, and crunchy like a granny smith...

Made my own cream soda tonight. First made a simple syrup with 1:1 ratio of filtered water and fine cane sugar (with tapioca starch). I don't normally have sugar on hand and I happened to just get that one the other day. I found out later that the starch will make the syrup cloudy visually. I also picked up a bottle of liquid gold aka bourbon vanilla extract at Trader Joe's. So I made the syrup and then put a couple teaspoons of the vanilla in.

Sodastream wise it's 0.86 quarts and then I tried 4.5 ounces of the syrup.

Flavor profile is decent. I think next time I'll make a bottle of carbonated water and then play with 8oz or so at a time to narrow down how much syrup is right.

If that doesn't work then next time I guess I can try rich simple syrup .

I have the sodastream as well. It's pretty great. We have been using their flavoring though for the most part.
